Edible oil (also known as cooking oil, a type of vegetable oil) is a plant or animal liquid fat used in frying, baking, and other types of cooking. Such oils have been part of human culture for millennia.

Oil allows higher cooking temperatures than water, making cooking faster and more flavorful, while likewise distributing heat, reducing burning and uneven cooking. In 2021/22, vegetable oil production amounted to some 208.8 million metric tons worldwide and was forecast to increase to over 217 million metric tons in the 2022/23 marketing year.
